Quinoa with Green Onions and Cashews


- 1/2 cup (120 ml) quinoa
- 1/4 tsp (2 ml) salt
- 1 fresh basil leaf, torn, OR a few flakes of dry basil
- 1/2 tsp (3 ml) lemon juice
- 1/2 tsp (3 ml) dry cilantro leaves
- 1/2 tsp (3 ml) cumin
- 1/4 tsp (2 ml) turmeric
- 2 green onions, sliced
- 1/4 cup (60 ml) cashews, toasted

Bring a cup (240 ml) of water to a boil, add the quinoa and salt, cover and lower heat. Cook for 12-14 minutes and allow to cool to room temperature.
To toast the cashews, place in a non-stick pan over medium heat for 3-4 minutes and allow to cool.

Combine the basil, lemon juice, cilantro leaves, cumin and turmeric and mix with the cooled quinoa. Serve at room temperature, topped with the green onions and toasted cashews. Serves 2.
