Lime &
Coconut Cookies - 2 tbsp (30 ml) brown sugar - 1/3 cup (80 ml) granulated
sugar - 1/2 tsp
salt - 2 cups
(480 ml) sweetened shredded coconut - 2 tsp (10 ml) grated lime
zest - 3/4 cup
(180 ml) margarine, cut into pieces - 2 tsp (10 ml)
vanilla - 1 egg
replacer - 1
1/2 cups (360 ml) all purpose flour
Mix the sugars, salt, coconut and lime in a food
processor. Add the margarine, vanilla and egg replacer and process until the
mixture is creamy.
Gradually add the flour, pulsing until it is
incorporated. Roll the dough into a log , approximately 2 inches (5 cm) in
diameter. Chill for at least 2 hours.
Slice the log into 1/4 inch (0.6 cm)
rounds. Place on parchment paper lined cookie sheets 1 inch (2.5 cm)
apart. Bake at
350F (180C) for 15 minutes. Allow to cool.
Makes 30
cookies.
